Finished stack with portobella, hummus, yellow pepper, eggplant, green onion and zucchini |
I've been doing some heavy browsing on Pinterest lately, not to mention reorganizing my Boards since my Food category was getting way too big. Yes, I think maybe that does make me sound old..."In my spare time, I like to reorganize recipes..." but I really don't care because I like food and it makes me happy (not in an eat your feelings type of way). Also, if you haven't check out Pinterest's new Explore Interests feed today!
This recipe is another I've had pinned for quite some time. It got lost in the collection, but its day finally came.

I did a quick marinade for the veggies using olive oil, salt and pepper, dill, balsamic vinegar, thyme and garlic.

I chose to grill inside on the stovetop because it's winter and that should about explain it. The grill is currently covered in snow and the temperature was in the single digits at most. Inside grill FTW. Of course, I forgot I also bought a red pepper, which is why the color variety isn't as pretty as it could be. If you view the actual Pin for this, mine will look drab in comparison.
Inside grilling (because it's winter) |
And here is my attempt at making hummus in a blender because not all of us own food processors. I've made waffle batter and pesto in a blender, so I figured I should at least attempt hummus. By the way, making your own hummus is WAY CHEAPER than buying it at the grocery store, and you can make whatever flavor you like!
This is the recipe the veggie stack recipe suggested: garbanzos, garlic, lemon juice olive oil and tahini.

The blending went okay. I would definitely do this again and I think you should try it, too. Just be careful. Don't get so thrilled with yourself that you stop paying attention and stab yourself with the blender blade while you're doing the dishes (not that I'd know about that or anything). And ouch.
